What a weekend! More productive than I thought it was going to be.
Friday evening, I did all my grocery shopping, and boy, did I get some wicked deals!
Saturday morning, the dog and I woke up early for a morning run with an encore performance from earlier this week of 5.6 miles. Unfortunately, the days are getting shorter, so we didn’t hit sunrise until the very end of our run. I would have loved to fully watch the sunrise, but time was not on our side that morning. Regardless, we had a good run, and fortunately for me, the squirrels were still sleeping (since DJ goes bonkers whenever he sees any.) After shoving some food down my throat and a quick shower, I headed to Troy for a CPR course for work. The whole experience was only 3 hours long, and the instructor was absolutely wonderful. He tied everything together so nicely that relearning the material was easy as pie. After taking the course and passing the test (100%!), I headed back home to pick up DJ and the two of us drove down for a get-together with my parents and brother. I ate too much during dinner, so by the time DJ and I got home, I was ready for bed (and it was only 8pm!) Yes, I am an old lady.
Sunday, nothing exciting. I had stopped at a local clothing store to look for new athletic clothes, only to discover that I’m shrinking. I’m fitting in size small shirts now (despite some tightness across the chest thanks to my “girls” being a bit larger than I like). I didn’t purchase any clothes but I did leave the store with a small smile playing across my lips. After returning home, I threw the leash on the dog, and we headed to the park to practice some obedience, which I’m happy to say he has not forgotten, especially since he had a week-long vacation. When DJ and I got home, my stomach reminded me that it was dinner time. After regarding the fridge for a brief moment, I decided to make a new recipe, and it was absolutely divine!
This is my rendition of a Warm Slaw. Enjoy!
The “dry” part
10-12oz of pre-cut slaw with red and green cabbage and shredded carrots (pre-cut because time ain’t on my side, sometimes)
3 tablespoons of balsamic vinegar
2 tablespoons of yellow mustard
10 grape tomatoes sliced in half
The “wet” part
Saute the following in a small amount of canola oil:
1 large onion, diced
1 large bell pepper, diced
1 large portabella mushroom, diced
(Season in the middle of sauteing with salt, red pepper flakes, garlic powder, oregano, and parsley flakes).
After the “wet” ingredients were cooked to my desired softness, I added it to the cabbage mixture and tossed everything together well. I then added on top some crushed peanuts for a little crunch. It was so good, I ate 2 bowls!
And as a side note, in case you haven’t noticed, Halloween is just around the corner, and I’m fairly excited about it this year! I have a cute shirt with the many faces of Jack from Tim Burton’s Nightmare Before Christmas (Love, love, LOVE that movie!), and I absolutely can’t wait to wear it. <Clap, Clap! Squeak!> I think all the Jack’s may glow in the dark, but I’m not certain. We’ll see, eh?
