I found some old emails from my Mom on my computer, including one for my grandmother’s recipe for Welsh cookies.
It’s funny… She always typed in ALL CAPS, so I keep reading them in the tone she used to shout her order from McDonald’s drive-thru. “I’D LIKE TWO CHEESEBURGERS, AND THAT’S ALLLLLLL!”
Mom was so sweet, she hated telling them “no” if she didn’t want fries with that, so she did a preemptive strike.

WELSH COOKIES (MAKES QUITE A FEW, YOU COULD MAKE HALF AS MUCH)
4 CUPS FLOUR
1 1/4 CUPS SUGAR
4 TSP. BAKING POWDER
1 1/4 TSP NUTMEG
1/2 POUND OF SHORTENING (I GUESS THAT WOULD BE 2 STICKS MARGARINE OR 1 CUP SHORTENING)
3 EGGS
1/4 CUP MILK
1 CUP RAISINs (SOAKED IN HOT WATER FOR 5 MINUTES)
COMBINE FLOUR, SUGAR, BAKING POWDER, AND NUTMEG. CUT IN SHORTENING. ADD EGGS, MILK AND RAISINS, BEAT WELL. ROLL OUT DOUGH ON LIGHTLY FLOURED SURFACE. (BETWEEN PLASTIC WRAP WORKS WELL) CUT WITH COOKIE CUTTER OR GLASS. IN AN ELECTRIC FRYING PAN AT 350 DEGREES OR REGULAR FRYING PAN ON MEDIUM HEAT, LIGHTLY BROWN COOKIES ON BOTH SIDES. AFTER COOKIES ARE COOL, DIP IN POWDERED SUGAR.
