I wanted to share with you all a super easy eggs for supper recipe that I tried last week when my hubby was away.
This was easy, delicious, and absolutely adorable. The original recipe came from
Food and Wine and is made to serve 4, but I modified it to serve one because I was a bachlorette for the evening.
I started off throwing some cherry tomatoes and garlic in a cast iron skillet and tossing with a bit of olive oil, salt and pepper.
Whirl it up.
Spoon it into a ramekin (this is the adorable part) or a non-stick muffin tin if you don't have ramekins. Top with an egg, parmesan cheese, and fresh basil and pop it into the oven.
If you like a softer yolk, you can cook it a little less. Also, if you have farm fresh eggs, this will taste all the better. I enjoyed mine with an avocado half drizzled with pistachio oil and it was absolute heaven.
